Gum mastic

Mastic is extracted from a tree sap found only on the Greek island of Chios. It is a clear, pale yellow resin with a slightly soft consistency. Because it is produced only on the island of Chios, it is now protected under the European Protected Designation of Origin (PDO) system. Locally, it is also known as "Tears of Christ." Mastic is one of the most important ingredients in varnish preparations.
